Salad or Chips house dressing

This is a lovely clean, smooth and tangy dressing. It’s made from ingredients that store well in the cupboard so you never need to go without. It’s slightly creamy owing to the nutritional yeast and for some magical reason, it doesn’t need any salt so if you’re an auto-salter, restrain yourself!

This dressing is perfect to liven up a green salad, also great on mushrooms, tofu and well, anything really. The recipe makes one perfect portion but I recommend scaling-up so you can have a ready-supply in your fridge.

Nutritional info

Olive oil contributes the majority of the calories in this dressing but don't be alarmed. It's a good fat, using it cool out the bottle preserves the healthy monounsaturated fats which can help lower your L (bad) cholesterol level. It's also a great antioxidant and anti-inflammatory.

  • 1 tsp Apple cider vinegar
  • 2 tsp Cold water
  • 3 tsp Olive oil
  • 0.2 tsp English mustard
  • 2 tsp Nutritional yeast

Method

Tips

  • No apple cider vinegar? Swap for lemon juice or white wine vinegar

  • This makes a delicious marinade for tofu

  • Keep in the fridge for 3 days
